What’s on Pixie’s plate?

Now that I have a toddler to feed, meal planning has become a new, challenging yet really exciting hobby for me being a full-time-Mama. Aside from still totally breastfeeding our Pixie (yey!), I intend to make sure she gets all the rest of the nutrients she needs to grow as healthy as she can be.

I do wish I know more about what complete nutrition really is though but really, I don’t. So, I’m glad there are quite a lot of online resources to read on and one of the 2 sites I’m stalking at the moment are: Our Little Green Dot, ย an eco-friendly directory and blog for Singapore, about organic and natural options for home, family, beauty and lifestyle.ย (thanks to my bestfriend Yvon for leading me to the site) and Super Healthy Kids, a blog withย lots of healthy meal recipes for kids and for the family!

For those who don’t know me well, I grew up NOT liking veggies at all. Guilty totally. But ever since then being pregnant and having our little girl, I had to take another route — healthier route that is. Thankfully, Pixie loves eating her veggies so far. She gets to be picky time to time but a little strategy and not giving up for her to try a healthy food works over time. ๐Ÿ™‚

And by the way, I’m no cook either so here’s to experimenting one healthy cooked meal at a time. ๐Ÿ™‚

Pixie’s Breakfast yesterday: Organic Oats with Asparagus + Apple + Egg
I am doing my best to always complete her every plate with grains, veggies, protein and fruits.
And below, was my glass of greens. Yes, I started juicing a week ago and been incredibly enjoying it so far. Not juicing to lose weight purposely, but rather for staying fit and as my healthier supplement since I’m still breastfeeding. Just knowing that I can drink up those full-packed-with-nutrients-veggies which I probably can’t swallow if I ate them gives me a sense of fulfillment I ate something right and doing something good for my body. I do still close my eyes before taking that first gulp sometimes (especially on greens!). ๐Ÿ˜›

If you haven’t heard what ‘kale‘ is and what it does to our bodies, I suggest you google now. I was amazed when I knew about it here. So, yes, I am getting addicted to ‘kale’ now and intends to include it to most of our meals if I can.

If you live in Singapore, I bought ‘Kale’ in the organic section at Giant Supermarket.
And here’s what happened during lunch….do you see ‘kale’ again? ๐Ÿ™‚
I really hope I can keep up with this healthier cooking project I’ve put myself in for Pixie and ours,too. I feel really proud. ๐Ÿ™‚

Recipe: Quinoa with chicken fillet strips, squash, kale, cherry tomatoes and zucchini.

Quinoa is considered a super-food with complete protein, containing all nine essential amino acids, with tons of fiber, iron, and many other important nutrients.ย A play-date mommy friend introduced me to it and finally, I just started cooking it last week and knowing how way way nutritious it is than the usual rice, I am getting hooked to it,too.

If you’re interested to try, I originally found this recipe over at Yummly. It’s interesting enough there’s lots of ways to cook it. And I’m too excited to try all! ๐Ÿ™‚
Note: most of what I cook now are organic vegetables. You can still opt to get the local produce, just make sure to pick the freshest you can find.


1 cup cooked Quinoa
2 cups chicken stock
squash, diced (as many as you like)
a stem or handful of Kale
zucchini, diced
cherry tomatoes
chicken fillet cut into strips
2 cloves garlic
sea salt and pepper (taste to your liking)
extra virgin olive oil or canola oil


  1. Prepare Quinoa: Rinse quinoa under running water for 2 minutes. (This step is very important or else it will taste bitter). Bring quinoa and chicken stock to boil in a medium saucepan. Once boiling, turn down the heat. Cover and let simmer for about 20 minutes, until the liquid is fully absorbed and the quinoa is tender. Remove from heat. Tip: while simmering, you can start steps 2-3.
  2. Sprinkle little sea salt and pepper on chicken fillet.
  3. Sautรฉ garlic and onion. Add in chicken fillet until brownish. Add in vegetables one at a time. Add the squash first since it usually takes longer to soften. Put zucchini and cherry tomatoes next, then kale as last since it wilts down fast. Cook until all vegetables are soft but not soggy, about 5 more minutes. Remove from heat, cool slightly.ย note: you can actually mix in more other favortie veggie you like whatever is available.
  4. Serve: You can serve right away by mixing quinoa and the veggies. Or you can transfer your cooked quinoa in an oven-baking dish. Pour over all sauted veggies on top. Sprinkle with parmesan and baked for a few minutes just until the parmesan melts.

Again, I am no cook okay, so I’m sure you got better ways of cooking this,too so feel free. I’d love to hear what you did or how it turned out for you so just leave me a comment below if you wish. ๐Ÿ™‚
Pixie’s lunch plate.ย I felt a great relief when Pixie ate her share happily. I almost finished half of the baking dish. Haha! Left the other half for the husband to eat later after his work. Usually I set aside also the same dish for Pixie’s dinner and just cook something quick like more sauteed veggies separately or roast or boil.

A few mommy friends have asked me how I prepare Pixie’s meals, so starting now, whenever I can, I shall post time to time whatever’s serve on our plates so I can hopefully share ideas to others too.
